Vegetable Kolhapuri

Ingredients:
Onion - 1
Tomato - 1
Potato - 1
Capsicum - 1
Carrot - 1
Cooked Peas - 1/2 cup
Cumin Seeds - 1 tsp
Garam Masala powder - 1 tsp
Tandoori Masala powder(optional) - 1 tsp
Turmeric powder - 1/2 tsp
Dhania powder - 1 tbsp
Red chilli powder -1 tsp
Coriander chopped - 1 tbsp
Lemon juice - 2 tsp
To Grind:
Onion - 2
Ginger - 1 inch
Red chillies - 3
Garlic - 4
Tomato -1
Sugar - 1tsp
Method:
Head oil in a frying pan and add cumin seeds. Allow to splutter. Add chopped onion and fry for 2 mins. Add all vegetables and fry for 2 mins.Add ground paste. Add red chilli powder, dhania powder and tandoori masala powder. Stir fry till oil separates.
Add salt. garam masala powder, 1/2 cup water. Allow to simmer for 2-3 minutes.Add lemon juice and garnish with chopped coriander. Serve with hot chapathis.

Mint Pulav


Ingredients:
Basmathi rice - 1 cup
Potatoes - 2 diced
Peas(shelled) -1/4 cup
Mint leaves - 1 small bunch
Grated fresh coconut - 3 Tbl spoon
Green chillies - 6 or 7
Onions - 2
Ginger - 1 inch piece
Turmeric powder - 1/4 tsp
Lemon -1/2
Salt - as required
Cloves - 2
Cardamoms - 2
Bay leaf - 1
Method:
Wash rice and pressure cook with 2 cups of water.Allow it to cool. Separate the grains.Pressure cook the potatoes and peel. Mash the potatoes. Cook peas separately. Cut onions into 1 inch long pieces. Fry mint leaves in little oil and then grind it along with coconut, green chillies, ginger and turmeric powder.
Heat ghee/oil in a broad frying pan and fry garam masala spices and onions. Add ground paste with potatoes and peas. Stir constantly in medium flame till the raw smell goes.Add powdered salt and cooled, separated rice to this. Mix well in high flame till rice becomes steaming hot.Squeeze lemon juice, mix gently and remove from fire. Serve hot with onion raita.

Stuffed Chilli Bajji


Ingredients:
Green chilli 8-10 (variety used to make bhajji )
Gram Flour 1 Cup
Rice Flour 2 Tbsp
Chilli powder 1 Tsp
Baking soda 1 Pinch
Coriander leaves 1 Tbsp
Salt to taste
For Stuffing:
Grated dry coconut 1 Cup
Tamarind powder 1 1/2 Tbsp
Cumin Powder 1 Tbsp
Salt to taste
Method:
Slit the green chillies on one side and stuff the dry coconut mixture.Keep aside.Prepare a slightly thick batter by mixing gram flour, rice flour, chilli powder,coriander leaves, soda and salt with water.Heat oil in a kadai.Dip the chillies in batter and deep fry.Delicious stuffed chilli bajjis are ready to be relished.

Vegetable salad

Ingredients
1 peeled diced cucumber
1 peeled diced raw mango
2 diced tomatoes
1 diced onion
1 tbsp chopped coriander
1/2 tsp roasted cumin powder
1/2 tsp chilli powder
2 tbsp lemon juice
Salt to taste
Method
Combine all the ingredients and serve.

Capsicum masala


This is a dry curry.It is very easy to prepare and the taste is just amazing.
Ingredients:
Capsicum-3
Onion-3 (cut into thin strips)
Tomato-2
Red chilli powder-1 Tbsp
Garam Masala powder-1 Tbsp
Salt to taste
Method:

Take 3 tbsp of oil in a frying pan. Add capsicum and onion and fry till it is half cooked. Add tomatoes.Add chilli powder and garam masala powder along with salt and fry till it leaves oil.
Serve with chapathi.
Variation: Add ginger-garlic paste and cashew paste while frying onions.

Vegetable Biryani


This is one of the ways of preparing vegetable biryani. Its easy to prepare and tastes good.
Ingredients:
Basmathi rice- 1 cup
Finely cut vegetables - 2 cups
Onion - 1 ( cut into thin long pieces)
Green chillies - 5
Chopped coriander leaves - 2 tbsp
Mint leaves- 1 tbsp
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Lemon juice - 2 tsp
To Grind:
Fresh coconut- 1 Cup
Corainder seeds- 3 Tsp
Khus khus seeds (gasagase)-1 tsp
Cloves-2
Cinnamon-2
Cardamom-2
Onions-2 big
Ginger and garlic paste-2 tsp
Method:
Wash basmathi rice. Pressure cook with 2 cups of water.
Heat ghee in a pan. Fry the garam masala spices, chopped onion, green chillies. Add the cut vegetables, coriander leaves and mint leaves. Add salt, chilli powder, turmeric powder and cook till the vegetables become tender. Add ground masala paste and cook until oil separates.
Finally add prepared rice and lemon juice.
Serve with onion raitha.

Gobi Masala

One of my all time favorites. Make sure you try this.
Ingredients:
Cauliflower-1( Boil the florets in hot water with little turmeric and salt)
Onion-3/4
Tomato-2/3
Curds-3 Tbsp
Corainder leaves - 2 Tbsp
Garam Masala-2 Tsp
Jeera Powder-2 Tsp
Red chilli Powder-1 Tsp
Turmeric Powder-1 Tsp
Green chillies -4
Ginger Garlic paste-1 Tsp
Preparation:
Grind onion and ginger-garlic paste. Heat ghee in a pan. Add cauliflower and fry till it turns brown in color.Add the ground masala paste and fry. Add all the masala powders. Add tomatoes and cut green chillies.Add curd. Add little water to make a gravy.Fry on medium flame till oil separates. Serve hot with chapathis.
